Try this quick and delicious side dish for a splash of color and summer flavor! I used thyme but you can use chives, dill or basil to garnish!
2 cup(s) asparagus, cut into 1 inch pieces
1 cup(s) carrot, julienned
1 cup(s) yellow squash, sliced
4 scallions, sliced
1 tablespoon(s) olive oil
2 garlic cloves, minced
fresh torn herbs
Heat oil in large skillet. Add carrot and saute for 1 minute; add garlic and rest of vegetables. Cook until just tender. Sprinkle in the fresh herbs just at the end before serving! Pair with an omelette, juicy steak or marinated chicken kabobs!
